You will find on many occasions that you can just jump over 3+ high blocks and save time by not having to go around or build over. I would suggest finding a horse that can jump 3 blocks, but goes at a moderate pace. Some go slower, but can jump 3 blocks (Maybe even 4, but I haven't seen or found one).
